🔪 How to Make the Bitsy Patties
1. Portion

Divide the beef into 1.5–2 oz pieces (8–10 pieces total).
2. Shape

Form loose balls, then gently flatten into 2-inch (5 cm) patties.

Don’t overwork the meat — keeps them tender.
3. Season

Sprinkle salt & pepper on both sides right before cooking.
🍳 Cooking (The Expert Way)
1. Heat your cooking surface

Use a hot skillet, flat-top, or cast-iron griddle.
2. Cook the patties

Add a thin film of oil or butter.

Place patties down and cook 2 minutes until the edges brown.
3. Flip once

Add a quarter-slice of American cheese to each.

Cover for 20–30 seconds to melt.
